It’s Meal Plan Mayhem: And I Need Your Help!

It’s “Meal Plan Mayhem” on the blog and all month long I’ll be featuring healthy and tasty recipes to ensure we can live lives we love. So whether you’re trying to drop a few pounds, get back to feeling good in your clothes or, like me, simply want to look as good on the outside as you feel on the inside, I invite you to join us for 30 days of celebrating our bodies and our health by loving and honoring ourselves with food.   To kick us off I shared this tasty recipe last night with my friends on social media. It was quick and easy and took less than 20 minutes to prepare.

Shani’s Quick & Easy Shrimp Pasta Marinara

Ingredients

4 oz – Shrimp (peeled & deveined)

1 cup – Marinara or Tomato Sauce (of choice)

1/2 cup – Angel Hair Pasta (I used gluten free)

1-2 cups – Fresh Broccoli

Extra Virgin Olive Oil (EVOO)

To Prepare It:

Line a baking sheet with aluminum foil and arrange your washed and cut broccoli florets on it.  Drizzle with EVOO and season lightly to taste. Roast in oven on 375 until done.

In a separate pot, bring your angel hair pasta to a boil. Drain pasta and rinse with cold water. Drizzle a little EVOO on the pasta to separate the noodles.

Saute your shrimp in a small skillet and warm your marinara sauce in a small pot on the stove.

When it’s all done, place your angel hair pasta on the bottom of your plate or bowl and top with shrimp, marinara sauce and broccoli. For a little extra umph, add a teaspoon of grated parmesan or romano cheese (but go easy…  a teaspoon will do just fine).

Plate on your favorite china and sit down, relax and treat yourself to a delicious and healthy meal.  After all, you’ve worked hard today and you’re worth it.
